Summertime Skinny Drinks

summertime skinny drinks1I’m known by my friends as a little Crystal Light obsessed. I love the variety of flavors, and it’s always on sale! Win-win! They all know that no matter what the season is, I have a skinny cocktail ready for them. In the fall, we tailgate with my Skinny Apple Cider. In the colder months, we enjoy Skinny Spiked Hot Chocolate. But summer is my best season: margaritas, mojitos, piña coladas and sangria! I like to combine Crystal Light with fresh fruits and simple ingredients for tasty, crowd pleasing treats. The first sign of warm weather is greeted with a Watermelon Mint Skinny Margarita.

This year, I have three new drinks to share with you! Get ready to save some calories at your next BBQ.  Just beware – these drinks are so tasty, you’ll want more than one! I like to sip cold water in between these cocktails. The best part about these drinks is they’re all SO easy to make into a mocktail,  just eliminate the alcohol Perfect for your pregnant friend who feels like she is missing out on all of the fun!

First up, Skinny Colada. I was so excited when I saw this tropical coconut Crystal Light flavor hit the shelves during the spring. I love pina coladas, but I hate the huge amount of calories. This drink is thickened up with frozen banana and I use coconut/almond milk instead of cream.

Here’s what you need: (for one large serving, or 2 small)

  • ½ cup unsweetened coconut or almond milk
  • 1 frozen banana (just throw peeled bananas on a plate in the freezer)
  • 1 cup ice
  • ½ pineapple chunks
  • 2 squirts of Crystal Light Tropical Coconut
  • 1.5 oz white rum (or Malibu, Myers….your favorite!)
  • Optional: ½ cup strawberries!
  • Tools: blender or Magic Bullet

In a mixer, combine all ingredients and blend! Garnish with a pineapple chunk. Other tasty add-ins: frozen mango, peaches or raspberry!

This Skinny Mojito recipe is very versatile. If you don’t like blueberries, keep them out for a basic mojito. Want something more tropical? Add pineapple!

Note: If you are using the larger quart sized packets, to make the mix, use 3 cups of water NOT the full quart. In this recipe, use ½ cup mix in place of individual packet.

Here’s what you need:

  • 1 individual packet of Crystal Light mojito mix
  • ¼ cup fresh blueberries
  • ½  lime, sliced into 4 pieces
  • 5 mint leaves (hold in your hand and clap…it wakes up the oils!)
  • 6 oz soda water (I like flavored sparkling water!)
  • 1.5 oz light rum
  • Tools: muddler, cocktail shaker

1. In the bottom of a cocktail shaker, muddle mint, blueberries and lime. Muddle just means to mash. If you don’t have a muddler, use a fork or wooden spoon in a glass. When it’s time to pour, just carefully strain into a different cup.

2. Pour rum into cocktail shaker and ½ cup ice. Put lid on and shake for about 30 seconds.

3. In a glass filled with ice, empty mojito mix and fill with soda water. Stir.

4. Strain the blueberry lime mixture into the glass. Top with an extra squeeze of lime juice.

The Skinny Margarita is my favorite. Since the Crystal Light is sugar free, you don’t have that heartburn or stomach ache from drinking the margarita mix. I like to do a variety of flavors and I’m always coming up with new ones; jalapeno-mango and this strawberry-peach are my newest!

Here’s what you need:

  • ½ cup strawberries
  • 1 squirt Peach Bellini Crystal Light
  • 1 individual packet of Crystal Light margarita mix
  • ½ cup ice
  • ½ cup water
  • 1.5 oz tequila (I don’t mind the cheaper El Torro Gold)
  • Lime for garnish
  • Tools: blender or Magic Bullet

1. In the blender, add strawberries, water, margarita mix and ice. Blend until smooth.

2. Fill a glass with ice; pour tequila and squirt of Peach Bellini.

3. Add blender mixture and garnish with a lime.
