Fool-em Vegan Alfredo Pasta Sauce
If you love the creaminess of Alfredo pasta sauce but can’t stand the thought of all those calories, try this slimming vegan Alfredo substitute. It combines the rich flavor with just a zing of lemon and all the mouth-feel of real cream. Believe me, this recipe has fooled many!
Vegan Alfredo pasta sauce is also so easy to prepare. Just throw everything into your processor or blender. I buy the tamari, tahini, coconut aminos and nutritional yeast online through Vitacost. I like tofu for this recipe but you can also use Haas avocado. If you use avocado, do not skip the lemon, as it prevents the mixture from turning brown. This sauce keeps well in the refrigerator for several days.
Combine in a food processor or blender:
1 half cake of firm tofu, rinsed, or 1 ripe Haas avocado
1 cup of almond milk
2 T tamari or coconut aminos
2 T tahini (sesame paste)
2 T Nutritional yeast (or more to taste)
1 clove fresh garlic or 1 tsp. minced
2 T lemon juice
Salt and pepper to taste
Serve over hot pasta or spiralized zucchini squash. Top with roasted sunflower seeds if desired.
