Recipe for Valentine’s Day Dinner at Home

Valentine’s Day is coming up soon! I want it to be special for my husband but he works odd hours so we won’t be able to go out to eat that night. But that’s OK because I have planned a very special dinner that is actual so easy to whip up that you won’t need a “special occasion” to make it, but it is sure to impress if you do!

So, now I am going to share my little secret on how to make Creamy Crab Stuffed Chicken Breast….but don’t tell my husband how easy this is OK?!?  Buy premade crab cakes. That’s it! So simple, but will save you tons of time in the kitchen!

Creamy Crab Stuffed Chicken Breast

  • 2 large chicken breasts, flattened down with mallet or can of soup
  • 2 premade crab cakes from your local seafood department
  • 4 oz. softened cream cheese
  • 1 tsp Old Bay seasoning
  • 1 clove garlic minced
  • Salt and pepper, sprinkled
  • 1 can of chicken gravy {or homemade if you prefer}


  1. Mix crab cake, cream cheese, Old Bay, garlic, and salt and pepper together
  2. Spread onto flattened, pounded down chicken breast
  3. Roll up chicken breast and secure with toothpick
  4. Place seam side down into greased roasting pan
  5. Dot with butter and sprinkle of old bay
  6. Top with chicken gravy
  7. Cook for 35 minutes at 350º

Roasted Garlic Potatoes

  1. Quarter about 5 red potatoes. Place in a bowl and coat with 1/4 cup olive oil, salt, pepper, and 4 cloves of minced garlic.
  2. Place in one layer on cookie sheet.
  3. Roast in the oven for 1 hour or until browned and crisp, flipping once to cook evenly.

Roasted Asparagus

  1. Place the asparagus in a large zip loc bag, drizzle with olive oil coating the asparagus completely.
  2. Spread the asparagus in a single layer on a baking sheet and sprinkle liberally with salt and pepper.
  3. Sprinkle Parmesan cheese over top, (along with garlic powder/salt, or fresh if you desire).
  4. Bake at 350º for about 15-20 minutes until crisp but tender.
  5. Remove from oven and sprinkle lemon juice on top.
